DIRECTIONS

In a food processor, combine cilantro, onions, and garlic. You may also add recao, salt, and pepper. Process to the consistency of semi-chunky salsa (not watery). Place in a zip lock freezer bag, and use as needed, or freeze in portions.

Sofrito is the base for most Puerto Rican dishes. It can be added to beans, rice, soups, stews, meats, poultry and even to dipping sauces.

Sofrito is a Caribbean and Latin American sauce of cilantro, garlic and onions.

Un sofrito es una especie de salsa que puede contener cebolla, tomate, ajo, sal, cilantro, cebollino y ajo troceado en pequeños pedazos que se frien hasta que quedan desechos.

The ingredients for sofrito vary with taste and the availability of the vegetables. I like to make my sofrito as simple as One, Two, Three! I love to make it fresh at the moment I'm cooking. However, I freeze it in small portions when I'm not planning to cook as often. The amount for each ingredient is also to taste. I love the taste of cilantro, therefore I use a lot more cilantro than the rest of the ingredients. It is my experience that when I use more onions, the taste of the cilantro is not so noticeable on the palate. I like to use red onions but you can also use white ones.
