Sofrito is the base for most Puerto Rican dishes. It can be added to beans, rice, soups, stews, meats, poultry and even to dipping sauces. Sofrito is a Caribbean and Latin American sauce of cilantro, garlic and onions. Un sofrito es una especie de salsa que puede contener cebolla, tomate, ajo, sal, cilantro, cebollino y ajo troceado en pequeños pedazos que se frien hasta que quedan desechos. The ingredients for sofrito vary with taste and the availability of the vegetables. I like to make my sofrito as simple as One, Two, Three! I love to make it fresh at the moment I'm cooking. However, I freeze it in small portions when I'm not planning to cook as often. The amount for each ingredient is also to taste. I love the taste of cilantro, therefore I use a lot more cilantro than the rest of the ingredients. It is my experience that when I use more onions, the taste of the cilantro is not so noticeable on the palate. I like to use red onions but you can also use white ones. |
